Acorn Squash and Black Bean Salad

Tarragon adds an earthy flavor to this salad, while the ginger brings in the right amount of spice. You’ll top the salad with a drizzle of honey to balance out the savory flavors. To ensure that your celery is free of strings, simply run a vegetable peeler along the back of the celery to take off a thin layer.

INGREDIENTS

SERVES 4

  • 1 Whole Acorn Squash
  • 7 stalk , medium celery
  • 1 cup cooked black beans
  • 1/4 cup Olive Oil, Extra Virgin
  • 1/4 cup Apple Cider Vinegar
  • 1 tsp Tarragon, Dried
  • 1 tsp Honey
  • 1/2 tsp Ground Ginger
  • 1/8 tsp Sea Salt
  • 1/8 tsp Ground Black Pepper

DIRECTIONS

1 Place the squash into a steamer basket in a pot with an inch or two of water in it and steam until soft. Approximately 10 minutes, depending on the size.
2 Take the squash out and let cool.
3 While the squash cools, mix the oil, vinegar, tarragon, honey, ginger, salt and pepper in a bowl.
4 Mix the squash, beans, celery and serve in a bowl or on a plate with greens.
5 Top or toss with the dressing.
