Acorn Squash Soup With Green Apple

This sweet and savory soup bursts with blended acorn squash, green apples and lightly sauteed onions. We used a store-bought vegetable broth for speed and ease, but feel free to swap in your favorite broth. Before serving, sprinkle on some nutmeg to enhance the flavors of this creamy soup.



  • 1 Whole Acorn Squash
  • 1 medium Granny Smith Apples
  • 1/2 medium Yellow Onions
  • 2 tbsp Olive Oil, Extra Virgin
  • 2 cups Vegetable Broth
  • 1/8 tsp Sea Salt
  • 1/8 tsp Nutmeg (Ground)


1 Place the oil into a saucepan over medium heat.
2 Add the onion and sauté for a couple of minutes.
3 Add the squash and apple chunks, then cover with the broth.
4 Bring to a boil, add the salt and simmer with the lid on, turning down the heat, until the ingredients are tender – about 10 minutes.
5 Let the soup cool for a few minutes, then blend.
6 Sprinkle nutmeg on top of each bowl.
