All-Day Veggan Soft Tacos

To make these tacos, you’ll generously stuff soft corn tortillas with a flavorful, fiber-rich vegetarian filling that includes black beans, pico de gallo and avocado. The highlight will be the comforting cilantro scrambled eggs. No cheese or sour cream is required!



  • 15 oz Black Beans
  • 1 cup Pico de Gallo
  • 1 fruit without skin and seed Avocados, raw, California
  • 2 tsp Lime Juice
  • 1/4 tsp Ground Coriander
  • 1/4 tsp Salt
  • 2 tsp Oil, avocado
  • 5 Free Range Large Eggs
  • 1/4 cup fresh cilantro
  • 8 Organic Corn Tortillas


1 In a medium bowl, stir together beans and pico de gallo. Set aside.
2 Peel, pit and dice the avocado. In a small bowl, stir together avocado, lime juice, coriander, and 1/8 teaspoon salt until creamy.
3 Heat avocado oil (or olive oil) in a large cast-iron or other stick-resistant skillet over medium-low. Add eggs and 1/8 teaspoon salt and gently scramble until no longer runny, about 3 minutes. Stir in cilantro.
4 Spread avocado mixture down the center of each corn tortilla (or whole grain tortilla of choice). Drain the bean mixture of excess liquid, then top the tortillas with bean mixture and scrambled eggs. Fold and serve.
