Amanda Russell's 4 Minute Ham, Cheddar & Chive Scramble

Everyone always says that they don't have time to cook something healthy at home. Well, do you have four minutes? Here's a meal that takes only four minutes to make, contains less than 150 calories and 15 grams of protein, and is loaded with nutrients. Oh yeah, it also tastes great!

INGREDIENTS

SERVES 1

  • 1 Egg
  • 1 tbsp Drinking Water
  • 2 tbsp Chives
  • 1 oz Deli Ham
  • 1 oz Cheese, Cheddar
  • 1/8 tsp Salt and Pepper, to taste

DIRECTIONS

1 Chop ham, and chives, shred cheese.
2 Coat a microwave-safe coffee mug with cooking spray.
3 Add Egg, Ham, Water, Chives and beat until blended.
4 Microwave on high for 30 seconds, stir around and microwave for another 30-45 seconds or until egg is cooked.
5 Add salt/pepper to taste and sprinkle with shredded cheese as desired.
