Apple & Swiss Quesadilla

INGREDIENTS

SERVES 4

  • 1 serving Apples, Jonathan
  • 4 Sprouted Whole Grain Tortilla
  • 1 sec Cooking Spray, Olive Oil
  • 4 oz Thin Sliced Cheese, Swiss
  • 1 tsp fresh thyme
  • 1/8 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1 1/2 tbsp Mustard, Dijon, Grained

DIRECTIONS

1 Core the small Jonathan (or other red) apple. Cut the apple in half lengthwise, then ut crosswise into extra-thin slices.
2 Lay the tortillas on a large cutting board. Spritz one side of the tortillas with cooking spray. Flip over 2 tortillas. Top these tortillas with half of the cheese, all of the apple slices, thyme, salt, pepper, and the remaining cheese. Top with the other two tortillas, sprayed side up.
3 Heat a medium or large (PFOA-free) skillet over medium-high. One at a time, cook the quesadillas until toasted and cheese is melted, about 1 1/2 minutes per side.
4 Cut each quesadilla into 6 wedges. Serve with the mustard on the side.
