Arugula Salad with Salmon and Avocado

Chef and author Seamus Mullen recommends using wild-caught salmon, when possible, for its eco-friendly benefits — plus omega-3 fatty acids to help fight inflammation. And to add much-appreciated texture, top off the peppery arugula, crisp radishes and creamy avocado with a bit of sunflower seeds for added unsaturated fats and minerals and a satisfying crunch.

INGREDIENTS

SERVES 1

  • 3 cups Arugula
  • 2 medium raw radishes
  • 1 medium peeled cucumber
  • 1/2 cup avocado
  • 1 oz unsalted, dry-roasted sunflower seed kernels
  • 3 oz cooked wild salmon
  • 1 each Dijon Vinaigrette Dressing

DIRECTIONS

1 Place all the ingredients in a bowl.
2 Add salad dressing and toss, sprinkle sunflower seeds on top.
