Potatoes have a reputation for being high in carbohydrate and are shunned in the cut throat dieting world. It’s time to stop shaming the potato and recognize it as one of the most versatile and tasty veggies we have available.

1 lb Red Potatoes

1 tbsp Oil, canola

1/2 tsp Seasoning, Italian

1/4 tsp Kosher Salt

1 tbsp Asiago Cheese, Shredded

1/2 cup Greek Yogurt

2 tbsp Chives, raw
DIRECTIONS

Preheat oven to 450°F.

Cut potatoes into wedges and transfer to a medium mixing bowl.

Add canola oil, Italian seasoning, and salt to potatoes — stir.

Pour potatoes onto a baking sheet and bake for 18 minutes.

Remove potatoes from the oven and loosen potatoes from the bottom using a spatula.

Sprinkle cheese over the top and return to the oven for 2 minutes.

Remove from oven and serve with Greek yogurt — sprinkle fresh chives over the top.
