INGREDIENTS

3 cups low-sodium vegetable broth

4 stalk scallion(s)

2 tsp Ginger Root

1/4 tsp sea salt

3/4 cup Oats, Steel Cut

2 Cage Free Hard-Boiled Eggs

2 tsp Tamari Soy Sauce

1 tsp Black Sesame Seeds
DIRECTIONS

Bring the broth, three-quarters of the scallions, the ginger, and salt to a boil in a medium saucepan. Add the steel-cut oats and bring back to a boil. Reduce heat to medium-low and simmer uncovered, stirring occasionally, until fully cooked, about 20 minutes.

Transfer to bowls, top with the boiled eggs, and sprinkle with the tamari, sesame seeds, and remaining scallions. Serve with additional tamari on the side, if desired.
