Asian Tofu Cashew Salad

This tofu salad is loaded with fiber and the cashews add crunch.

INGREDIENTS

SERVES 1

  • 5 cabbage leaves
  • 1/4 cup shredded carrots
  • 1/4 cup water chestnuts
  • 4 oz firm tofu
  • 15 cashews
  • 1 tbsp rice vinegar
  • 1 tsp Dijon mustard

DIRECTIONS

1 Place cabbage in bowl.
2 Add remaining ingredients and toss.
