DIRECTIONS

Preheat oven to 350 degrees. Grease muffin tin.

Place avocado in food processor and process until completely smooth. Then add black beans, melted coconut oil, and almond butter to food processor and blend until smooth.

Add eggs, maple syrup, and vanilla extract back to the bowl with black beans. Process until combined. Add baking soda, salt, and cocoa powder and process until just combined.

If desired, add dark chocolate chips or nuts and stir to incorporate.

Spoon about 1-2 tablespoons of brownie batter into each cup of the muffin pan.

Bake for 12 minutes, until tops of brownie bites start to look dry.

Allow brownies to cool in the muffin pan for 10 minutes. Gently run a thin, sharp knife around the edge of each brownie bite to loosen, then carefully lift each brownie bite of the cup.

For extra flavor, top with dark chocolate chips, cacao nibs, carob chips or sliced almonds.
