Avocado and Black Bean Taco Salad

This salad has lots of hearty ingredients that provide fiber and protein to satisfy for hours.

INGREDIENTS

SERVES 1

  • 2 cups chopped romaine lettuce
  • 1/2 cup canned black beans
  • 1/4 cup frozen corn kernels
  • 1 cucumber(s)
  • 1/2 cup cherry tomatoes
  • 1/2 medium avocado
  • 1 tbsp plain soy yogurt
  • 1/4 lime
  • 1 dash salt and pepper

DIRECTIONS

1 Place romaine, beans, corn, cucumbers, tomatoes, and avocado in a bowl.
2 Mix together yogurt, lime, and salt and pepper.
3 Toss salad with yogurt lime dressing.
