Avocado and Cucumber Gazpacho

If you have spent any time in Spain, or are a foodie who likes trying international food and new dishes, you are probably acquainted with Gazpacho, a cold vegetable soup.

INGREDIENTS

SERVES 2

  • 1/2 medium avocado
  • 1/4 cucumber(s)
  • 1 cup Vegetable Stock
  • 1/4 medium red onion
  • 1 garlic clove
  • 1/4 tsp ground cumin
  • 1 pinch cayenne pepper
  • 1 pinch salt and pepper
  • 1 cup Cilantro
  • 1/2 peeled fruit lemon

DIRECTIONS

1 Process the avocado, cucumber, vegetables stock, onion, garlic, cumin, cayenne, salt, pepper, cilantro, and juice of a half of a lemon in a blender until smooth.
2 Transfer to a bowl, cover with a plate, and refrigerate for an hour, or until serving time.
3 Serve the gazpacho in two small bowls or in two glasses.
4 Optional: garnished with roasted pepper slices and croutons
