Avocado Hollandaise Eggs Benedict

Nothing says healthy brunch like an Avocado Hollandaise Eggs Benedict. Avocados are a celebrated source of healthy fats and nutrients such as potassium. Paired with the Omega-3 fatty acids rich salmon, this dish sets the tone for a health-conscious day.



  • 1/2 fruit without skin and seed Avocados, raw, California
  • 1 tbsp lemon juice
  • 1/4 cup Hot Water
  • 2 tbsp olive oil
  • 1 cup Roasted Gourmet Sweet Potato Slices
  • 4 Salmon, red (sockeye), filets with skin, smoked (Alaska Native)
  • 4 large poached egg


1 Make the Avocado Hollandaise by placing half an avocado, lemon juice and 1/4 cup of hot water in a blender or food processor. Puree until smooth.
2 If the puree is too thick, add more hot water, one tablespoon at a time, to the food processor until the mixture is the consistency of regular Hollandaise sauce. Season to taste with salt and freshly cracked pepper.
3 Cut the sweet potato into rounds. For each serving, place two rounds of sweet potato on a plate. Top with 1-2 slices of smoked salmon, then perch a poached egg on top.
4 Spoon Avocado Hollandaise over the poached eggs and garnish with chopped herbs (fresh chives, dill, parsley), cracked black pepper and crushed red pepper.
5 Store extra Avocado Hollandaise in an air-tight container in the refrigerator for 1-2 days.
