Avocado Kebabs with Chimichurri Sauce

Kebabs are an easy solution for hassle-free entertainment.

INGREDIENTS

SERVES 4

  • 1 fruit Avocado*
  • 16 Cherry Tomato
  • 8 oz Fresh Mozarella Cheese
  • 4 cups arugula
  • 0 cup Cilantro
  • 1/4 cup Parsley
  • 1 tsp dried oregano
  • 1 garlic clove
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp Apple Cider Vinegar
  • 1 pinch salt and pepper

DIRECTIONS

1 Cut 4 kebab sticks in half, to make 8 small kebabs.
2 When cubing avocado and cheese, make sure they're large cubes (thick enough to stay intact on kebab).
3 Put a cherry tomato, an avocado cube, and a cheese cube in a stick. Repeat in this order, until the stick is full. Repeat with the other kebabs.
4 Cover each plate with 1 cup of baby arugula, and place 2 small kebabs on top.
5 Put all the rest of the ingredients (cilantro to salt and pepper) in a food processor or blender, and process until chunky.
6 Serve each plate drizzled with Chumichurri.
