Avocado Soup With Shrimp

Chilled soup is one of the easiest dinner entrees ever.

INGREDIENTS

SERVES 1

  • 1 medium avocado
  • 3/4 cup Low-fat Buttermilk
  • 3/4 cup Vegetable Broth
  • 1 tbsp Lemon Juice
  • 1/4 tsp sea salt
  • 1/8 tsp Sea Salt, Coarse, Mediterranean
  • 1/8 tsp Coriander Chutney
  • 3 tbsp Cilantro
  • 9 shrimps Cooked & Peeled Large Shrimp

DIRECTIONS

1 Add the avocado, buttermilk, broth, lemon juice, salt, coriander, and 1 Tbsp. of the cilantro leaves to a blender. Cover and puree well on high speed, at least 1 minute. Adjust seasoning. (Tip: For extra spice, add cayenne pepper or black pepper to taste.) Keep chilled until ready to serve.
2 Mince the remaining 2 Tbsp. cilantro leaves. Toss the chilled shrimp with the cilantro.
3 Pour the soup into a soup bowl and serve the shrimp around the bowl. Serve cool.
