Avocado Spread on Toast

The texture of a very ripe avocado is often described as “buttery,” and this quality makes it an excellent replacement for butter in many recipes.

INGREDIENTS

SERVES 4

  • 1 medium avocado
  • 2 tsp Extra Virgin Olive OIl
  • 1/2 tsp dried oregano
  • 1 pinch salt and pepper
  • 4 whole-grain bread slice(s)
  • 4 Olives (black)
  • 2 piece Sun Dried Tomatoes
  • 2 piece Artichoke Hearts, Marinated & Quartered

DIRECTIONS

1 Mash the avocado in a bowl using a potato masher or a fork.
2 Add the olive oil, oregano, salt and pepper, and mix well.
3 Toast the bread slices, and spread with the avocado mash.
4 Top each toast with a few sliced of olives, sun dried tomatoes, and artichokes.
