Avocado Stuffed with Shrimp Ceviche

Stuffed avocados are one of the most popular methods as it allows versatility and is relatively easy.

INGREDIENTS

SERVES 2

  • 8 shrimps Cooked Shrimp
  • 1/4 tomato(es)
  • 1/5 medium red onion
  • 1 tbsp Cilantro
  • 2 peeled fruit lemon
  • 1 tbsp Sliced Black Olives
  • 1 pinch salt and pepper
  • 1 medium avocado

DIRECTIONS

1 Combine in a bowl, shrimp, tomato, red onion and cilantro.
2 Slice lemons and juice both - adding juice to bowl.
3 Add olives and salt and pepper to the mixture and combine well.
4 Cut the avocado in half, remove the seed, and peel it.
5 Remove a little bit of the avocado center to make it more hollow.
6 Chop the avocado you removed from the center, and add it to the shrimp ceviche.
7 Fill each avocado half with half the shrimp ceviche.
