Avocado and White Bean Salad

White beans give this salad protein and crackers and veggies give it lots of fiber.

INGREDIENTS

SERVES 1

  • 2 cups mixed baby greens
  • 1/2 cup canned white beans
  • 1/2 medium avocado
  • 2 canned hearts of palm spears
  • 1/2 lemon
  • 1 dash sea salt
  • 8 gluten-free crackers

DIRECTIONS

1 In a serving bowl, toss greens with beans, avocado, and hearts of palm.
2 Squeeze juice from lemon and season with salt.
3 Serve with crackers.
