Bacon and Egg Salad

This salad marries the quintessential breakfast flavors with a hearty salad that will set the day up right. Loaded up with protein and plenty of veggies — plus sweet persimmon — to keep the salad from feeling too heavy, chef and author Seamus Mullen recommends pastured bacon to keep this salad healthier and eco-conscious.

INGREDIENTS

SERVES 2

  • 3 large fried egg
  • 3 oz cooked bacon
  • 1 fruit without refuse Persimmons, native, raw
  • 1 medium raw carrots
  • 3 cups Arugula
  • 1 medium raw radishes
  • 1 tbsp olive oil
  • 1 tbsp cider vinegar
  • 1/4 tsp Sea Salt
  • 3/5 g Pepper, Ground Black

DIRECTIONS

1 Fry eggs in cooking oil.
2 Plate ingredients, starting with the arugula and add eggs and bacon on top.
3 Mix together olive oil, cider vinegar, salt and pepper and pour on top.
