Bacon-Wrapped Stuffed Jalapeño Poppers

Stuff and wrap these jalapeños the day before your party, then pop them in the oven about 15 minutes before your guests arrive to greet them with a warm, tantalizing treat. Remove the seeds from the jalapeños if you want a dish with less heat.



  • 1 tbsp Olive Oil, Extra Virgin
  • 4 tbsp Onion, Diced White
  • 1 clove garlic
  • 3 cups Baby Spinach
  • 8 oz cream cheese
  • 1 1/2 cups Cheese, Colby-Jack
  • 8 Jalapeno Peppers, Hot
  • 8 slice raw bacon


1 Heat olive oil in a medium skillet over high heat. Sauté onion for 2-to-3 minutes until translucent. Add garlic and sauté for an additional 30 seconds.
2 Add the baby spinach and sauté for 3-to-5 minutes just until the spinach starts to wilt.
3 Stir in the softened cream cheese, stirring gently until completely dissolved. Season with salt and black pepper to taste. Remove from heat.
4 Gently stir in the shredded cheese. Let cool completely.
5 While the spinach filling cools, cut fresh jalapeño peppers in half lengthwise. Scoop out seeds and veins. 6. Rinse with cold water; pat dry.
6 Preheat oven to 425°F. Fill each jalapeño with the cooled spinach filling. Wrap jalapeños with bacon. Arrange on a baking sheet and bake at 425°F for 15-to-18 minutes until the bacon is golden and crispy.
7 Remove from oven and serve immediately.
