Bali-Inspired Chicken, Egg and Rice

Having a stir-fry for breakfast makes great use of leftovers that you might have from dinner, and it is a quick, protein-packed start to the day. You can easily make variations of this recipe with any vegetables that you enjoy.



  • 2/5 lb Breast Of Chicken
  • 1/2 cup Onions, Green, Raw
  • 2 medium raw carrots
  • 1/3 cup Yellow Onion
  • 2 tsp olive oil
  • 1/4 cup Water (filtered Tap Water)
  • 1 tsp Red Curry Paste
  • 1 tsp Tamari
  • 2 large whole egg
  • 1 cup cooked brown rice


1 Heat a skillet over medium heat and add the oil.
2 Add the onions and carrots, sauté for a minute or two.
3 Add the water.
4 Mix in the curry paste.
5 Add the chicken and tamari, then place a lid on the pan and cook for five minutes
6 Stir in the rice and eggs.
7 Continue cooking until both the chicken and eggs are cooked through and the liquid is absorbed.
