You may be tempted to turn up your nose at the addition of beans in your breakfast smoothie, but they add delicious creaminess and all but disappear when paired with tangy-sweet pineapple and creamy coconut milk.

INGREDIENTS

SERVES 1

  • 1/2 cup White Navy Beans
  • 1 cup Pineapple Chunks
  • 1 cup Coconut Milk Lite
  • 2 tsp Honey
  • 1/4 cup Crushed Ice
  • 1 tbsp Organic Shredded Unsweetened Coconut (bulk)

DIRECTIONS

1 Combine 1/2 cup drained and rinsed white beans, 1 cup diced fresh pineapple, 1 cup unsweetened coconut milk, 2 teaspoons honey or pure maple syrup, 1/4 cup crushed ice, and 1 tablespoons unsweetened shredded coconut (optional) in the blender and blend until smooth.
