Beet Chips With Lemon Zest

Vegetable chips are a simple way to make veggies fun and easy to eat. Beets are naturally packed with nitrates, which the body converts to nitric oxide, which helps with blood flow and blood pressure. Using medium to large beets is best because the chips will shrink during baking.



  • 12 oz raw beets
  • 2 tbsp Olive Oil
  • 1 tbsp lemon zest
  • 1/8 tsp Kosher Salt
  • 1 tsp Chives, raw


1 Preheat oven to 350F.
2 Wash, scrub and peel the beets, then cut into 1/32” slices. To slice the beets, you may use a food processor, mandolin or sharp chef’s knife. Place sliced beets in a large bowl and toss with olive oil.
3 Spread sliced beets on a baking sheet in a single layer.
4 Bake for 10 minutes, flip and bake for another 10 minutes, or until crisp enough that edges have begun to curl and a little color has developed.
5 Remove from oven, sprinkle sparingly with salt and garnish with lemon zest and/or chives. Allow chips to cool slightly before serving.
