Beets, raspberries and strawberries make this an antioxidant-packed smoothie. Courtesy of Washington, DC based dietitian Charmaine Jones, MS, RDN, LDN.

INGREDIENTS

SERVES 1

  • 1 serving Raw Red Beet (small)
  • 1/2 cup raspberries
  • 1/2 cup Strawberries
  • 1/2 banana
  • 1/4 cup Pineapple, Fresh
  • 2 cups water
  • 1 tsp Fresh Ginger Root

DIRECTIONS

1 Slice the beet bulb in half. Remove leaves from the stems (Optional).
2 Cut the beet stems into small pieces (or simply run them through a juicer). Place the beet stem pieces (or the juice) in the blender until liquefied.
3 Add the remaining ingredients; raspberries, strawberries, bananas and filtered or coconut water and blend until all ingredients are cohesive. Enjoy!
4 TIP: I highly recommend you add the beet leaves to this smoothie. If not, then save them and add them to a salad or an entrée because they too are packed with nutrients.
