Bell Pepper Cacio e Pepe

This is a simple, peppery dish for those that love bell peppers.

INGREDIENTS

SERVES 1

  • 1 tsp grapeseed oil
  • 1 yellow bell pepper
  • 1/2 tsp ground black pepper
  • 1 pinch sea salt
  • 1/2 tsp extra-virgin olive oil
  • 3 tbsp Pecorino Romano Cheese

DIRECTIONS

1 Heat the grapeseed oil in a large (PFOA-free) nonstick skillet over medium-high heat.
2 Slice the pepper into thick or thin spaghetti-like strips. Add the bell pepper, black pepper, and salt and sauté until softened and begins to caramelize, about 5 minutes. Remove from heat, sprinkle with the olive oil and 2 Tbsp. of the cheese, and toss to combine.
3 Transfer to a pasta bowl and sprinkle with the remaining1 Tbsp. cheese.
