Black Bean and Avocado Taco Salad

This salad has lots of hearty ingredients that provide fiber and protein to satisfy for hours. You can use plain yogurt or Greek yogurt in place of the soy yogurt depending on your dietary preferences.

INGREDIENTS

SERVES 1

  • 2 cups chopped romaine lettuce
  • 1/4 cup canned black beans
  • 1/4 cup frozen corn kernels
  • 1 cucumber(s)
  • 1/2 cup cherry tomatoes
  • 1/4 medium avocado
  • 1 tbsp plain soy yogurt
  • 1/4 lime
  • 1 dash salt and pepper

DIRECTIONS

1 Place romaine, beans, corn, cucumbers, tomatoes, and avocado in a bowl.
2 Mix together yogurt, lime, and salt and pepper.
3 Toss salad with yogurt lime dressing.
