Black Bean Chilaquiles With Salsa Verde

INGREDIENTS

SERVES 4

  • 1 cup Salsa, Tomatillo
  • 4 oz Tortilla Chips, Baked, Yellow Corn
  • 15 oz Beans, Black
  • 1/3 cup low-fat cottage cheese
  • 1 medium avocado
  • 3 tbsp Red Onion
  • 2 tbsp Cilantro

DIRECTIONS

1 Add the salsa to a large skillet over medium-high heat and bring to a simmer while stirring. Add the tortilla chips and gently toss with tongs until coated with the salsa and slightly softened, about 2 minutes. Fold in the black beans until heated through, about 1 minute.
2 Transfer to individual bowls or plates. Dollop with the cottage cheese. (Hint: Alternatively, sprinkle with crumbled queso blanco or Cotija cheese for authenticity.) Sprinkle with the avocado, onion, and cilantro.
