Black Bean and Pine Nut Sandwich with Slaw

This open-faced sandwich lots of filling protein and fiber, and antioxidants from the cranberries.

INGREDIENTS

SERVES 1

  • 1/2 cup shredded red cabbage
  • 1 tsp agave nectar
  • 1/2 tsp red wine vinegar
  • 1 tbsp dried cranberries
  • 2 tsp whole grain mustard
  • 1 whole-grain bread slice(s)
  • 1/3 cup canned black beans
  • 1 tbsp pine nuts

DIRECTIONS

1 Line a broiler rack with foil and place about 4" from heat. Preheat broiler.
2 Combine cabbage, agave nectar, vinegar, cranberries, and 1 teaspoon mustard in a bowl.
3 Mash black beans with salt and pepper in a small bowl.
4 Layer the bean spread on the bread, then the cabbage mixture and pine nuts.
5 Broil 3 minutes.
