INGREDIENTS

SERVES 4

  • 1 cup Quinoa Cooked
  • 1 cup Black Beans - Canned
  • 1 fruit , cut piece Mango
  • 1 med Avocado
  • 1/4 cup Red Onion
  • 1 dash Salt
  • 1 dash Pepper, Black
  • 3/4 cup Cilantro
  • 1/2 cup Greek Yogurt
  • 2 tbsp Garlic
  • 2 tbsp Lime Juice Raw
  • 1/4 cup Extra Virgin Olive Oil
  • 2 tsp Balsamic vinegar
  • 3 tbsp Honey

DIRECTIONS

1 For the dressing:
2 Combine yogurt, cilantro, garlic and lime in a food processor or blender and pulse until the cilantro is chopped up to fine pieces.
3 Add the olive oil, vinegar and honey and blend until emulsified and smooth.
4 To prepare salad:
5 Layer quinoa and black beans then top with mixed avocado, mango and onion.
6 Serve salad topped with dressing and salt/pepper to taste.
