Ever wish you could eat spoonful after spoonful of mango salsa? That’s the inspiration for this protein- and fiber-packed salad from TheHungryHedgehog.com’s Jessica Moore.

INGREDIENTS
SERVES 4

1 cup Quinoa Cooked

1 cup Black Beans - Canned

1 fruit , cut pieces Mango
-
1 med Avocado

1/4 cup Red Onion
-
1 dash Salt
-
1 dash Pepper, Black

3/4 cup Cilantro
-
1/2 cup Greek Yogurt
-
2 tbsp Garlic
-
2 tbsp Lime Juice Raw
-
1/4 cup Extra Virgin Olive Oil
-
2 tsp Balsamic vinegar
-
3 tbsp Honey
DIRECTIONS

For the dressing: Combine yogurt, cilantro, garlic and lime in a food processor or blender and pulse until the cilantro is chopped up to fine pieces.

Add the olive oil, vinegar and honey and blend until emulsified and smooth.

To prepare salad: Layer quinoa and black beans then top with mixed avocado, mango and onion.

Serve salad topped with dressing and salt/pepper to taste.
