Breakfast Burrito

Breakfast Burrito

This is a perfect breakfast for using up leftover meat from the night before. Pairing with sweet potato, Greek yogurt and sprouted-grain tortillas makes it a healthy and delicious breakfast too.



  • 3 oz Steak, Sirloin
  • 1 medium Baked Sweet Potato!
  • 1 tbsp Taco Seasoning
  • 1/4 cup water
  • 2 tsp canola oil
  • 2 tbsp Plain Greek Yogurt
  • 2 tbsp fresh cilantro
  • 1 Sprouted Grain Tortillas


1 Combine sweet potatoes and taco seasoning in large nonstick skillet over medium heat. Add water.
2 Cover and cook 8 to 10 minutes or until crisp-tender and water has almost evaporated, stirring once. Stir in oil; continue cooking, uncovered, 4 to 6 minutes or until potatoes are tender and begin to brown, stirring occasionally.
3 Meanwhile, combine Greek yogurt, cilantro and hot sauce (if included) in small bowl. Set aside.
4 Add cooked beef to potato mixture, just to heat thru.
5 Heat a few minutes minutes or until beef is heated through, stirring occasionally, adding 1 to 2 tablespoons water, if needed to avoid sticking.
6 Add potatoes and beef to tortilla and roll up into a burrito. Top with Greek yogurt mixture.
