Breakfast Cloud Bread

This is one heavenly breakfast to wake up to! These savory cloud breads are gluten-free and taste soft and fluffy — almost like meringue.

INGREDIENTS

SERVES 5

  • 3 large whole egg
  • 3 tbsp cream cheese
  • 1/4 tsp Cream of tartar
  • 2 slice cooked turkey bacon
  • 1/4 cup Parsley
  • 1/4 cup Thyme, fresh
  • 2 tbsp Grated Parmesan Cheese
  • 1/2 tbsp red pepper flakes
  • 1/4 tsp Salt

DIRECTIONS

1 Preheat the oven to 300 degrees Fahrenheit (make sure the oven rack is in the middle).
2 Carefully separate the eggs, making sure there's no yolk in the whites, and place the egg yolks in one bowl, and the whites in another.
3 Add the cream cheese, grated Parmesan and pinch of salt to the egg yolks. Use a hand mixer to mix until smooth and creamy.
4 To the egg whites bowl, add the cream of tartar and use a hand mixer to beat on high speed, until the mixture is fluffy and forms stiff peaks. This should take at least 5 minutes.
5 Gently fold the egg yolk mixture into the egg whites, mixing carefully (make sure to not break up the fluffiness of the egg whites too much).
6 Quickly spoon the mixture into 10 to 12 even rounds on a greased baking sheet (do this as fast as possible to prevent the mixture from melting).
7 Sprinkle on the parsley, thyme, bacon and red pepper.
8 Bake for 20 minutes on the middle rack.
9 Broil for 1 minute or until golden brown (watch carefully so the rounds don't burn).
10 Remove from the oven and let the rounds cool on a rack before eating.
11 Notes:
  It's important to take the time to whip the egg whites at high speed until they form very stiff peaks. The recipe won't be successful unless this step is done correctly.
  Feel free to sub in your herbs and toppings of choice.
