Breakfast food isn?t just for mornings. Mix it up and have your eggs for dinner. Eggs are high in protein, and they provide iron, vitamin D and two nutrients that support eye health, lutein and zeaxanthin.

INGREDIENTS

SERVES 1

  • 2 Egg
  • 2 tbsp Milk
  • 1/4 cup Peppers, Sweet, Red
  • 2 tbs Chopped Onion
  • 1 dash Salt
  • 1 dash Pepper*
  • 1/2 Tomato, Small

DIRECTIONS

1 In a small bowl, combine the eggs, milk, red pepper, onion, salt and pepper.
2 Heat a lightly greased pan over medium heat.
3 Pour mixture into pan and cook until eggs are almost set; then add tomato.
4 Cook until eggs are set and cooked all the way through.
