Breakfast Nachos with Sweet Potato Waffle Fries, Black Beans, Shiitake Bacon and Eggs

Instagrammer Sarah Gim @thedelicious uses sweet potato waffle fries as the base for these nachos. She maintains that they are crisp and golden like hash browns, but with all the nutritional virtue of sweet potatoes. She uses black beans and eggs as toppings to make the nachos protein-rich and satisfying.

INGREDIENTS

SERVES 8

  • 1 lb Sweet Potato Waffle Fries
  • 2 cups cooked black beans
  • 2 cups Jack Cheese
  • 1/2 cup cooked bacon
  • 1 cup avocado
  • 2 medium whole tomato
  • 4 large fried egg

DIRECTIONS

1 Heat oven, line a baking sheet with parchment paper and prepare sweet potato waffles fries according to package directions.
2 Remove the baking sheet from the oven, shake the baking sheet to loosen any fries that might be stuck to the parchment paper, and remove about half the waffle fries to a separate plate. Add whole grain tortilla chips to the waffle fries on the baking sheet to completely cover the baking sheet in a single layer.
3 Spoon 1 cup of cooked black beans over the sweet potato waffle fries and tortilla chips, then sprinkle 1 cup of jack cheese over the beans (the cheese will already start to soften from the heat of the waffles fries). Add the sweet potato waffle fries from the extra plate to create a second layer on top of the cheese. Spoon the remaining 1 cup of black beans, then the remaining 1 cup of jack cheese.
4 Turn the oven to Broil mode and broil the nachos in the oven until the cheese is melted and toasted around the edges, about 7 minutes.
5 While the nachos are baking, fry 4 eggs.
6 Remove the baking sheet from the oven. Slip the fried eggs over the nachos. Top the nachos with all the additional nacho toppings. Serve immediately with salsa, guacamole, and extra nachos toppings like sliced radish, red onions, scallions, jalapeno, cilantro, lime, and sour cream.
