Breakfast Turkey-Apple Sausage Mini Patties

These appealing muffin-tin sausage patties are made of ground turkey, oats, red onion and apple. The soluble fiber found in apple (called pectin) and oats (called beta-glucan) both have the ability to lower “bad” cholesterol. Add plenty of seasoning to make these sausage patties drool-worthy.



  • 1 second spray Organic Olive Oil
  • 1 Small Granny Smith Apple
  • 12 oz Ground turkey, 93% lean, 7% fat, pan-broiled crumbles
  • 1/2 cup Old Fashioned Oats
  • 1/2 cup Red Onion
  • 1 1/4 tsp Ground Black Pepper
  • 1 tsp Sea Salt
  • 1/2 tsp Spices, sage, ground
  • 1 Free Range Large Eggs
  • 1 tbsp Olive Oil, Extra Virgin


1 Preheat oven to 425°F.
2 Coat the 12 cups of 2 (PFOA-free) nonstick mini-muffin trays with cooking spray. (Note: Prepare in batches, if need.)
3 Peel, core, and coarsely grate the apple. (Hint: Yield should be 4 to 5 ounces grated. Ideally, choose a tart apple, such as Granny Smith.)
4 In large bowl, combine grated apple with all remaining ingredients.
5 Evenly divide turkey sausage mixture into the cups of the mini-muffin trays (about 1-ounce mixture per cup). Flatten top of each using a flexible silicone spatula.
6 Place mini-muffin trays onto a large rimmed baking sheet to catch any excess cooking juices. Bake until well done, about 18 minutes. If desire extra brownness, remove sausage from trays, place directly on rimmed baking sheet, and broil for 1 minute or desired brownness.
7 Serve as an entrée or side, ideally on a bed of sautéed greens.
