This one-pan dish appears simple, but its ingredients draw out a unique earthy flavor in every bite. The onions and cherry tomatoes are essential components of the frittata, but the eggs are what adds nutritional value to one's body.

INGREDIENTS

SERVES 2

  • 1 tbsp Olive Oil, Extra Virgin
  • 1/2 Yellow Onions
  • 3/4 cup Cherry Tomatoes
  • 4 large whole egg

DIRECTIONS

1 Preheat the broiler.
2 In an oven-safe, 8-inch pan, heat olive oil over low-medium heat.
3 Add onion and sauté until fragrant for 1 to 2 minutes.
4 Add 1/2 cup of cherry tomatoes until warmed through and liquid begins to simmer for 2 to 3 minutes.
5 Sprinkle on salt and pepper, if desired.
6 Add most of the rosemary and stir for another minute. The liquid in the pan will thicken slightly into a sauce-like consistency.
7 Pour eggs into pan and quickly and gently stir to evenly distribute ingredients. Let sit and cook until edges begin to pull away from pan for about 10 minutes. Then, turn off heat.
8 Top with remaining rosemary and a final dash of salt and pepper, if desired. Gently place remaining 1/4 cup tomatoes on top of frittata, cut side up.
9 Transfer pan to broiler for 1 to 2 minutes until top of frittata is lightly browned.
10 Remove from broiler and let it cool for 1 to 2 minutes before serving.
