Brownie Bites With Matcha Dust

Who can resist brownies, especially when they’re shaped like hearts and dusted with matcha? Don’t worry too much about anyone’s waistline; matcha contain green tea catechins, which have potential anti-obesity effects.



  • 2/3 cup Whole Wheat Pastry Flour
  • 1/2 cup unsweetened cocoa powder
  • 3/4 tsp Sea Salt
  • 5 Free-Range Eggs, Large Brown
  • 1 tsp Pure Vanilla Extract
  • 1 1/4 cups Turbinado Sugar
  • 12 oz Chocolate, Fine Artisan Dark, Baking Chunks, Semisweet
  • 6 tbsp Butter, Organic Unsalted
  • 1 tbsp Powdered Green Matcha Tea


1 Preheat the oven 325°F. Line a 9- x 13-inch baking pan with unbleached parchment paper.
2 In a medium bowl, whisk together the flour, cocoa powder, and salt. Set aside.
3 In a large bowl, whisk together the eggs and vanilla extract until well combined. Add the sugar and whisk until well combined.
4 Gently melt the chopped chocolate (about 60% cacao) with the butter in a double boiler (or heatproof bowl placed over simmering water).
5 Add the melted chocolate mixture to the egg mixture while continuously whisking until well combined. Add the flour-cocoa mixture and gently stir until combined.
6 Pour the batter into the prepared pan and bake until springy to the touch, about 35 minutes. Cool in the pan on a rack. Then chill in the refrigerator.
7 Cut the chilled brownies into 48 small squares. Or cut into 24 heart-shapes using a 1¾-inch heart-shaped cookie cutter, reserving leftover brownie scraps for other dessert purpose. Transfer brownie bites directly onto a cooling rack set on a baking sheet. Dust with the desired amount of the culinary matcha powder using a small mesh strainer. (Hint: For a sweeter topping, dust with a mixture of equal parts matcha powder and powdered sugar.)
8 Store in the refrigerator or at room temperature. Box up as desired for gifting.
