Buddha Veggie Rice Bowl

You’ll have some time to do yoga while your meal is simmering on the stovetop — and wafting a glorious ginger fragrance throughout the room. After enjoying this plant-based dinner in a bowl, you’ll be feeling rather Zen.

INGREDIENTS

SERVES 1

  • 1/3 cup Brown Rice, Medium-grain, Uncooked
  • 1/4 cup Organic Unsweetened Coconut Milk
  • 1 tbsp Fresh Ginger Root
  • 1 tbsp Tamari Soy Sauce
  • 1 tsp honey
  • 8 oz Cut Green Bean
  • 1 red bell pepper
  • 2 tbsp Basil, Fresh

DIRECTIONS

1 In a large saucepan, stir together the rice, 2/3 cup cold water, the coconut milk, ginger, soy sauce, honey, green beans and bell pepper. Bring to a boil over high heat. Reduce heat to low and simmer until the rice is just cooked through, about 50 minutes.
2 Remove from heat and let stand covered for 10 minutes to complete the cooking process.
3 Serve immediately. Top with basil at serving time.
