Cajun Fish Sticks Tacos with Party Mango Salsa

A fresh take on the fish taco, this crunchy dish features sweet, tangy flavors from a combination of mango, red onion, jalapeno, lime juice and cilantro add-ons.



  • 3/4 cup mango
  • 1/4 cup red onion
  • 1/2 pieces Jalapeno Peppers
  • 2 tbsp fresh cilantro
  • 2 tsp lime juice
  • 1/4 tsp Sea Salt
  • 8 fish sticks
  • 1/2 tsp Cajun Seasoning
  • 4 Corn Tortillas
  • 3/4 cup Vegetarian Black Bean Refried Beans
  • 3/4 cup raw red cabbage
  • 1/2 Hass Avocados


1 Preheat the oven to 450°F (or per package directions of fish sticks).
2 In a medium bowl, stir together the mango, onion, jalapeno, cilantro, lime juice, and 1/8 teaspoon of the salt. Set aside.
3 Bake the fish sticks (or chicken fingers) on a baking sheet until cooked through, about 20 minutes (or per package directions). Season with the Cajun seasoning.
4 Warm or lightly grill the corn tortillas (or whole grain tortillas of choice) before filling, if desired.
5 Spread each tortilla with the refried beans (warm first, if desire). Top with the cabbage and avocado. Season with the remaining 1/8 teaspoon salt. Top with the Cajun fish sticks and half of the mango salsa. Serve with the remaining mango salsa on the side.
