Enjoy this bowl of hearty goodness. A cross between a hearty soup and oatmeal, this recipe combines cajun-seasoned turkey, yummy sun-dried tomatoes and just enough oats to hold it all together. Recipe courtesy of Jackie Newgent, RDN.
INGREDIENTS

2 tsp extra-virgin olive oil

5 oz Ground Turkey, Lean

3/4 tsp Cajun Seasoning

2 piece Sundried Tomatoes

1 stalk scallion(s)

1/4 tsp sea salt

1/4 tsp Ground Black Pepper

1/4 cup Rolled Oats, Old Fashioned

1 cup Baby Kale
-
1/2 tsp Grated lemon zest
DIRECTIONS

Heat the oil in a medium (PFOA-free) nonstick skillet over medium. Add the turkey and Cajun seasoning and sauté until crumbled and well done, about 5 minutes.

Bring 1 1/4 cups water, the sun-dried tomatoes, scallion, salt, and pepper to a boil in a small saucepan.

Reduce heat to medium-low and stir in the oats and cooked ground turkey until the oats are fully cooked, about 5 minutes. Stir in the kale until wilted, about 1 minute.

Transfer to a bowl and sprinkle with desired amount of the lemon zest.

TIP: Use a salt-free cajun seasoning.
