California Breakfast Salad

Salad no doubt provides an easy way to pump up your vegetable intake.

INGREDIENTS

SERVES 1

  • 1 egg(s)
  • 2 tsp White Balsamic Vinegar
  • 2 tsp extra-virgin olive oil
  • 1 1/2 cups Baby Lettuce Mix
  • 4 leaf fresh basil leaves
  • 1/2 cup Grape Tomatoes
  • 1/4 cup Red Onion
  • 1/3 medium avocado
  • 1/8 tsp sea salt
  • 1/4 tsp ground black pepper

DIRECTIONS

1 Spritz a small (PFOA-free) nonstick skillet with cooking spray and heat over medium. Add the egg and cook until desired doneness.
2 Meanwhile, whisk together the vinegar and oil in a medium serving bowl. Add the lettuce, basil, tomatoes, onion, and avocado and toss to combine.
3 Top the salad with the prepared egg and sprinkle with the salt and pepper.
