This Italian-inspired breakfast is packed with fiber and contains healthy fats. It's convenient and perfect for anyone on-the-go.

INGREDIENTS

SERVES 1

  • 2 oz fresh part-skim mozzarella cheese
  • 2 high-fiber crackers
  • 1/3 tomato(es)
  • 1 tsp extra-virgin olive oil

DIRECTIONS

1 Place one ounce of mozzarella over each cracker.
2 Place tomato slice on top of mozzarella and drizzle with olive oil.
