Caprese Cocktail Salad

There’s something so divine about the simplicity of a Caprese salad. And there’s something so healthful.

INGREDIENTS

SERVES 8

  • 2 tbsp White Balsamic Vinegar
  • 1/3 cup extra-virgin olive oil
  • 3 garlic clove
  • 1 tsp sea salt
  • 16 oz Grape Tomato
  • 10 oz Fresh Mozzarella Pearls
  • 32 Fresh Basil Leaves

DIRECTIONS

1 Whisk together the vinegar, oil, garlic, and salt in a medium bowl.
2 Drain the quartered tomatoes of excess liquid. Add the tomatoes and mozzarella “pearls” (or small cubes) to the garlic vinaigrette and stir until well combined. Taste and adjust seasoning.
3 Transfer the salad mixture into 8 martini or other cocktail-style glasses, about 1/2 cup salad each. Insert the basil leaves along the sides. Enjoy with cocktail forks.
