Caramelized Banana Dessert Hummus

Ripe bananas are the secret ingredient to keeping added sugar to a minimum in this dessert hummus. The natural sugars in bananas increase as a banana ripens.

INGREDIENTS

SERVES 6

  • 15 oz Chickpeas (garbanzo beans, bengal gram), mature seeds, canned, drained, rinsed in tap water
  • 1 medium banana
  • 2 tbsp Dark Brown Sugar
  • 2 tbsp Coconut Milk, Unsweetened Vanilla
  • 1/2 tsp Kosher Salt
  • 1 medium banana
  • 1 tsp brown sugar
  • 1 tbsp unsalted butter
  • 2 tbsp heavy whipping cream

DIRECTIONS

1 Drain and rinse chickpeas. Remove the skins by gently squeezing and separating the skin from the bean.
2 To make the dessert hummus, add chickpeas, the first banana, brown sugar, salt, and milk to a food processor and blend until smooth.
3 To make the topping, in a small skillet, add the second banana, brown sugar and butter over medium heat. When butter melts and starts to sizzle, turn off the heat. Pour over the top of the hummus.
4 In a small mason jar, add whipping cream. Shake until you no longer hear liquid (about three to four) minutes.
5 Dollop your whipped cream on top of warm the warm bananas.
6 Note: This dip is best served at room temperature.
