Carrot and Cucumber Shaved Salad

Carrots contain beta-carotene, which can help protect the skin from UV light, lessening the effect on the skin. Eating foods high in beta-carotene cannot replace sunscreen, but it can work with your body naturally to glow from within.

INGREDIENTS

SERVES 4

  • 1 medium raw carrots
  • 1 medium peeled cucumber
  • 2 tbsp Olive Oil, Extra Virgin
  • 2 tbsp lemon juice
  • 2 tbsp Chives, raw
  • 1/4 tsp Kosher Salt
  • 1/8 tsp Pepper, Ground Black

DIRECTIONS

1 With a vegetable peeler, peel the carrot and cucumber into thin shavings and place in a bowl.
2 Toss with olive oil and lemon juice.
3 Sprinkle with fresh chives, salt, and pepper.
