“Riced” cauliflower is cauliflower that’s been chopped up until it looks like grains of rice. You can use a food processor or you can buy “pre-riced” cauliflower from most grocery stores. Here, it’s cooked with fresh turmeric, a powerful anti-inflammatory root that also provides a beautiful yellow color.
INGREDIENTS

1/2 cup Riced Cauliflower

1 tbsp Turmeric

1/2 cup Fennel, bulb, raw

1 medium red bell pepper

2 tbsp Hemp Seeds

2 tbsp lemon juice

2 tbsp olive oil

1 1/2 tsp Dill Weed, Dried

1 tbsp Fennel frond
-
1 tsp Mustard, Whole Grain Dijon

1/2 tsp Maple Syrup

1/4 tsp Salt
-
1/4 tsp Pepper, Black
DIRECTIONS

In a steamer or in a pot with an eighth of an inch of water, steam cauliflower with turmeric for three to four minutes until barely cooked. Set aside to cool.

Whisk whole grain mustard, maple syrup, olive oil, lemon juice, salt and pepper together. Then pour into the bottom of a Mason jar.

Add the bell peppers, riced cauliflower, fennel fronds, chopped fennel and then the fresh dill.

Seal until ready to eat. (Note: You can substitute the dried dill for 1 1/2 tablespoons of fresh dill.)
