Riced Cauliflower Mason Jar Salad

“Riced” cauliflower is cauliflower that’s been chopped up until it looks like grains of rice. You can use a food processor or you can buy “pre-riced” cauliflower from most grocery stores. Here, it’s cooked with fresh turmeric, a powerful anti-inflammatory root that also provides a beautiful yellow color.



  • 1/2 cup Riced Cauliflower
  • 1 tbsp Turmeric
  • 1/2 cup Fennel, bulb, raw
  • 1 medium red bell pepper
  • 2 tbsp Hemp Seeds
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 1/2 tsp Dill Weed, Dried
  • 1 tbsp Fennel frond
  • 1 tsp Mustard, Whole Grain Dijon
  • 1/2 tsp Maple Syrup
  • 1/4 tsp Salt
  • 1/4 tsp Pepper, Black


1 In a steamer or in a pot with an eighth of an inch of water, steam cauliflower with turmeric for three to four minutes until barely cooked. Set aside to cool.
2 Whisk whole grain mustard, maple syrup, olive oil, lemon juice, salt and pepper together. Then pour into the bottom of a Mason jar.
3 Add the bell peppers, riced cauliflower, fennel fronds, chopped fennel and then the fresh dill.
4 Seal until ready to eat. (Note: You can substitute the dried dill for 1 1/2 tablespoons of fresh dill.)
