Cauliflower Bread

Cauliflower Bread

The “dough” can be baked into patties until crisp, or grilled on a skillet laced with olive oil.

INGREDIENTS

SERVES 6

  • 1 Cauliflower (medium)
  • 2 egg(s)
  • 1 garlic clove
  • 3 oz fresh part-skim mozzarella cheese
  • 1 dash salt and pepper

DIRECTIONS

1 Preheat oven to 450 degrees.
2 Chop the cauliflower into florets, removing the thick, green center stem.
3 Place the cauliflower into a food processor and process until it's a mashed potato texture.
4 Next, microwave the cauliflower until soft - about 3-5 minutes.
5 In a bowl, combine cauliflower with eggs, garlic, cheese, salt and pepper.
6 Coat a baking pan with spray oil and "form" bread into the shape you're looking for.
7 Bake for 25 minutes or until bread begins to brown.
