Cauliflower “Gilled Cheese” Sandwich

Hooray! You can sink your teeth into a sandwich even if following a carb-modified eating plan. The trick to this cheesy sandwich is that the bread isn’t bread at all; it’s made with a palate-pleasing cauliflower patty that’s shaped like sliced bread and baked.



  • 1 lb Cauliflower Florets
  • 1 1/2 tbsp Olive Oil, Extra Virgin
  • 1/4 cup Hemp Seeds
  • 1 1/2 tbsp chia seeds
  • 1 1/2 tbsp Seeds, sesame seeds, whole, dried
  • 2 medium scallions
  • 1 tsp Sea Salt
  • 2 large whole egg
  • 5 oz Shredded Cheese, Medium Cheddar
  • 1 clove garlic


1 In a large saucepan, add the cauliflower florets. Add cold water to cover the florets. Bring to a boil over high heat. Reduce heat to medium, cover, and simmer until the cauliflower is fork tender, about 12 minutes. Drain well.
2 Preheat the oven to 475°. Line two large baking sheets with unbleached parchment paper. (Note: Bake in batches using one baking sheet, if necessary.)
3 In a large bowl, mash the cauliflower with the olive oil until the mixture resembles lumpy mashed potatoes. Add the hemp seeds, chia seeds (preferably white), sesame seeds (preferably black), scallions (green and white parts), garlic, and salt and stir until well combined. Set aside 15 minutes to allow chia seeds to gel. Stir in the eggs.
4 Ladle the mixture onto the prepared baking sheets using a 1/3-cup dry measuring cup, then flatten the mixture using your fingertips to form 8 (4-inch diameter) square or round patties.
5 Bake the patties for 15 minutes, gently flip over each patty with a spatula, then bake until cooked through and golden brown, about 8 to 10 minutes more. Top all patties with the cheddar cheese (or your favorite cheese!) and bake until the cheese is melted, about 2 minutes more.
6 Form four sandwiches from the patties, placing cheese sides together. Let stand for 5 minutes to allow to firm up slightly. Cut in half on the diagonal. Serve while warm.
