DIRECTIONS

Cut the cauliflower into florets and add it to a food processor. Blend into cauliflower rice.

Pour the cauliflower rice into a microwave save bowl, cover it with a damp paper towel and microwave for 7 minutes, until fully cooked.

Pour cooked cauliflower rice into dishcloth, and twist and squeeze excess moisture. Squeeze out as much liquid as you can.

Transfer the cauliflower rice to a mixing bowl and mix in mozzarella cheese, grated Parmesan, paprika, salt and pepper.

Pre-heat the oven to 400 ̊F degrees

Line a baking sheet with parchment paper and grease it with coconut oil.

Shape cauliflower mixture into 4 even flat squares, about ¾ inch thick. Press firmly and tightly.

Bake for 14-16 minutes, until they are crispy golden brown. Cool for 15 minutes.

Heat large pan to medium low heat (cast iron is best).

Brush the top of a slice of cauliflower bread with melted butter.

Lay the buttered side down on the pan and add two slices of cheese. Brush a second slice with butter and place it on top of the cheese, buttered side up. Cook for 2-4 minutes on each side, until cheese is melted and bread is crispy.

Repeat with remaining slices of bread.
