Cauliflower Grilled Cheese

This take on America's classic comfort food is all about the cauliflower. Despite not being green like a few other popular superfoods, this cruciferous vegetable is packed with nutrients, like vitamins C and K. It also features a host of antioxidants, including manganese, which supports bone and skin health.

INGREDIENTS

SERVES 4

  • 1 head medium Cauliflower, raw
  • 1/2 cup Cheese, Shredded Mozzarella
  • 1/2 cup Grated Parmesan Cheese
  • 1 tsp Paprika
  • 1/4 tsp Sea Salt
  • 1/4 tsp Ground Black Pepper
  • 1 tbsp Coconut Oil
  • 1 tbsp unsalted butter
  • 4 Cheese, Medium Cheddar, Sliced

DIRECTIONS

1 Cut the cauliflower into florets and add it to a food processor. Blend into cauliflower rice.
2 Pour the cauliflower rice into a microwave save bowl, cover it with a damp paper towel and microwave for 7 minutes, until fully cooked.
3 Pour cooked cauliflower rice into dishcloth, and twist and squeeze excess moisture. Squeeze out as much liquid as you can.
4 Transfer the cauliflower rice to a mixing bowl and mix in mozzarella cheese, grated Parmesan, paprika, salt and pepper.
5 Pre-heat the oven to 400 ̊F degrees
6 Line a baking sheet with parchment paper and grease it with coconut oil.
7 Shape cauliflower mixture into 4 even flat squares, about ¾ inch thick. Press firmly and tightly.
8 Bake for 14-16 minutes, until they are crispy golden brown. Cool for 15 minutes.
9 Heat large pan to medium low heat (cast iron is best).
10 Brush the top of a slice of cauliflower bread with melted butter.
11 Lay the buttered side down on the pan and add two slices of cheese. Brush a second slice with butter and place it on top of the cheese, buttered side up. Cook for 2-4 minutes on each side, until cheese is melted and bread is crispy.
12 Repeat with remaining slices of bread.
