Swap mashed potatoes for a vegan alternative with this simple cauliflower mash recipe, courtesy of Nourishing Gurus. Bonus: You only need five ingredients to make it.
INGREDIENTS

1 Cauliflower (medium)

1/4 cup Coconut Milk

1 tbsp Extra Virgin Olive Oil

1 pinch sea salt

1 pinch ground black pepper
DIRECTIONS

TIP: You can use optional spices: dill, chives, curry, etc.

Steam cauliflower until soft.

Use immersion blender or mixer to mash cauliflower and coconut milk (consistency of mashed potatoes).

Add oil, spices to taste.
