Swap mashed potatoes for a vegan alternative with this simple cauliflower mash recipe, courtesy of Nourishing Gurus. Bonus: You only need five ingredients to make it.

INGREDIENTS

SERVES 4

  • 1 Cauliflower (medium)
  • 1/4 cup Coconut Milk
  • 1 tbsp Extra Virgin Olive Oil
  • 1 pinch sea salt
  • 1 pinch ground black pepper

DIRECTIONS

1 TIP: You can use optional spices: dill, chives, curry, etc.
2 Steam cauliflower until soft.
3 Use immersion blender or mixer to mash cauliflower and coconut milk (consistency of mashed potatoes).
4 Add oil, spices to taste.
