Cauliflower “Mashed Potatoes”

If you want to get more nutrition and fewer calories out of your side dishes, try swapping nutritious cauliflower for typical recipes that call for starchy white potatoes.

INGREDIENTS

SERVES 4

  • 1 Cauliflower (raw), Medium Head
  • 3 tbsp Butter, Whipped, Unsalted
  • 1 tsp Sea Salt, Coarse, Mediterranean
  • 1/4 tsp Black Pepper

DIRECTIONS

1 Chop cauliflower into florets into small pieces (making sure all leaves and tough, inner core are removed).
2 In a sauce pan over medium-high heat, bring 1 inch of water to boil.
3 Steam cauliflower over stove top - cooking for 10-15 minutes or until cauliflower is tender but not completely broken down.
4 Put about half of the cauliflower into a food processor and remove 1/2 cup of the excess liquid. Puree until completely smooth - with minimal bumps.
5 Add the remainder of the cauliflower and puree. Add more liquid if needed. Next, add the butter, salt and pepper and continue to thoroughly puree.
